Paleo Blueberry Almond Flour Pancakes

I am very much a breakfast/brunch person. Belgian waffles, eggs sandwiches, biscuits and gravy, french toast casseroles always accompanied with bacon of course, and then there are pancakes. I gave you guys the buttermilk pancake recipe that's ruined me for any other pancake not too long ago, but since Jesse and I are trying to limit our flour and sugar intake, we decided to go with these blueberry almond flour pancakes instead. 

 

the perfectly fluffy buttermilk pancakesWhile they are healthier than , they taste just as delicious. Maybe even more delicious knowing that as you eat them, you're being a little bit better to your body? Nonsense, both are delicious! Try them both, simultaneously and you be the judge. 

 

 

Paleo Almond Flour Pancakes

 

 

Ingredients 

1 cup almond flour

2 eggs 

1/2 cup almond milk 

1/2 tsp baking soda

1/4 tsp salt 

1 teaspoon cinnamon

1 Tbs honey or agave

1 tsp vanilla extract 

1 cup blueberries 

 

Directions

Combine all the ingredients. Cook them off in a heated pan and get ready for some flippin' delicious pancakes. Ha get it?

 

 

 

 

 

 

The recipe couldn't be more simple and the outcome couldn't be anymore delicious!

 

If you're not paleo, then by all means use regular milk instead of almond milk. It should turn out just as good! You can also substitute the blueberries, for bananas, chocolate chips (if you're feeling naughty) or leave them plain and drizzle on a delicious homemade fruit compote instead of syrup!
