The Best Buttermilk Pancakes

Happy Sunday everyone. Today I wanted to do everyone a favour and share this recipe for the best buttermilk pancakes in the world! Stolen from my girl Martha Stewart, these fluffy, cakes are a family favourite. 





These pancakes taste just like slow Sunday mornings and quality time with your family.  They are so light and fluffy, you feel like you might just be eating delicious, sweet air. Making it relatively easy to consume 20 pancakes. So be careful. You've been warned. 





I  like to add a homemade fruit compote, bananas or peanut butter on top. Peanut butter may sound weird but give it a try if you've never done it. It might just change your breakfast world.





2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 tablespoons sugar

2 large eggs, lightly beaten

3 cups buttermilk

4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle



Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
